Mexico’s national cuisine is an infinite source of inspiration, knowledge and enjoyment, but also is one of the most undervalued and underappreciated cuisines in the world. Well …I think is time to change that.

I'm Rocio Carvajal, food researcher, cook, author and speaker, my passion for gastronomic history – my own heritage – research, cooking and sharing drove me to create a series of sister projects: Pass the Chipotle podcast and SABOR! This is Mexican food magazine, through them I hope to share my findings - a new approach to Mexico’s food and culinary traditions – with the whole world!

The production of Pass the chipotle requires hours of hard work and dedication to bring you an interesting and refreshing show, but it all comes at a price such as building a recording cabin, getting through fixed expenses such as web maintenance, purchase books and making trips to archives.
