As much as I love coleslaw, though, I don't really want to eat whole roasted cabbage.
Brussels sprouts, on the other hand?
(allow 1/4-1/3 lb per person)
1-2 lb brussels sprouts
1-2 TBS olive oil
salt and pepper (or other seasoning) to taste
1. Preheat the oven to 400.
2. Trim and halve brussels sprouts. Tip into a baking pan large enough to hold the veggies in one layer.
3. Drizzle with the olive oil, then toss with your hands until evenly distributed. Add seasoning to taste.
4. Roast in preheated oven for 20-25 minutes, or until browned and perfectly cooked to your taste.
