Crockpot stewed chicken legs
  • Chicken legs (we usually do the quarters so it is legs & thighs, but do you)
  • 1/4 small red onion, diced
  • 3 cloves garlic, minced (you can also do 3 spoonfuls from the jar if you're like me and lazy)
  • 2 sun dried tomatoes
  • 1/2 cup chicken broth/stock
  • 1 small can tomato paste
  • 1/4 cup white wine
  • ½ teaspoon salt
  • Italian seasoning (oregano, rosemary, thyme roughly 1/4 tsp)
  • Coarse ground black pepper to taste)

 Toss chicken, onion, garlic, tomatoes, chicken stock, tomato paste, wine, and seasonings into the slow cooker. Cook on low setting for 4-6 hours, or high for 2-3. You can serve it over rice or pasta, shred it & put it a pizza or garlic bread (it is really good with cheese), or seve it with roasted potatoes & broccoli. This also works well with chicken breasts for those days when you have ingredients but no concrete ideas or the will to be in the kitchen.
