My countertop ginger bug

WTH is this, you may ask? It’s my newest fun adventure with food...creating my own fermented ginger for recipes and juices. It’s super easy and is fantastic to have around - think FREE PROBIOTICS. It’s two ingredients and takes about two min a day to care for.

Using a large mason jar, fill up with 2 cups distilled water. Mince your organic ginger. Add 2 tsp ginger and 2 tsp organic sugar and mix. Put a soft cap on top so it can “breathe” and let sit in a dark corner of the counter. Each day you add 1 tsp ginger and 1 tsp sugar and mix. As you can see above, after a few days it begins to bubble...this is your sign it’s ready. You can use the juice or the ginger as you see fit in recipes and for drinking (lemon gingerade in the best)! Add distilled water back to 2 cup line as you use it.

At any point you can throw it in the fridge and use it up, keeps for several weeks without adding anything to it in the fridge. If it grows mold, throw it out and start with a new one. You must “feed” it daily to leave it on the counter.
