These European style pickled mushrooms are really easy to make. They will taste as good as store-bought and actually even better without any unnecessary additives.


1 cup rice or white vinegar per 3 cups water


2 cups rice or white vinegar per 2 cups water

1 bay leaf

4 allspice berries or 1/2 teaspoon crushed allspice

1 teaspoon Himalayan pink salt

1 tablespoon sugar, honey or 2 drops stevia (optional)

1/2-1 jalapeno

1 garlic clove

1-2 lb mixed mushrooms (button, cremini, shimeji)

1 onion

2 tablespoons olive oil
