I've created recipes for dozens of major companies, wrote several cookbooks and have had my own recipe blog since 2004 but what I've dreamt of doing the last few years is publishing a cookbook featuring recipes for something I've become quite passionate about- tinned and preserved seafood. 

I was told by all of the major publishers that there is no interest in tinned seafood in the US. Clearly they are wrong.
