Hi Guys,
My name is Tatianna and I'm the creator of JP's Delights.  I create all different types of preserves like jams, jellies, chutneys, confits, conserves, fruit butters, marmalades, etc.  I make them with farm fresh local and seasonal organic ingredients.  They can be kosher, vegan, and gluten-free depending on the needs of my patrons.  I want to partner up with farmers who are throwing out ugly produce they can't sell to help stop food waste.  Teaming up with local farmer cuts transportation which lowers the carbon footprint.  I also want to promote the 3Rs of recycling, reusing, and reducing by offering 10% off to patrons who bring back their glass jars.  I want to increase my impact by preserving lives through a 10% donation to a reputable cancer charity organization.  

What's in a Name?
The name JP's Delight is for my dad, John-Paul, who inspired me to follow my dreams.  Unfortunately, he passed away 2 months before the initial start of JP's Delights after an 11 month battle with stage 4 esophageal cancer.  This is my motivation for donating 10% towards esophageal cancer research.  

How Your Patronage Will Help With Our Goals...
     After about 3 months of research and planning (February-May, 2019), I'm ready to acquire a booth at farmer's markets, fairs, festivals, once a week outside of Whole Foods when they have their vendor's day, etc.  Having a booth is expensive both in terms of initial set up costs for the booth's displays, in fees for entrance, and in time.  This is where your sponsorship comes into play in the beginning.  I'm always looking for new opportunities, places, and people to team up with so please spread the word.
     There is always more experimentation to do and your tips and donations help me with that.  Creating preserves is part art and part science.  It takes a delicate balance of flavors, ingredients, and textures.  With the pressure of costs being slightly relieved I can play around with flavor combinations that don't already exist such as preserves from delicate fruits like melons which can't be cooked too long lest they lose their fresh flavors and bright colors and because their pH isn't below the 4.6 acidity level.  It will also enable me to explore special ingredients that allow more people to enjoy my creations such as sugar that isn't processed with bone char so it'll be vegan-friendly and with no sugar added options for my diabetic patrons.  
     I plan to be able to create and offer a variety of different preserves that have options which are Dairy Free, Wheat Free, Gluten Free, Low Sodium, Vegan, Vegetarian, Fat Free, Low Fat, Kosher, Halal, Ital, Organic, Local, Seasonal, All Natural, No corn syrup, No GMO, Fair Trade, Small Batches Made in the USA by Women, Immigrants, and people with Disabilities.
     My next step is to find a better and more suitable commercial kitchen to operate out of so I can better cater to the needs of patrons around the US and around the world.

Jampstarting my career: About Me and How I Started-
My background is in arts and sciences.  I graduated from the University of Florida with degrees in Anthropology, Art History, and Zoology.  I went on to graduate with a masters degree in Biology from Florida Atlantic University.  I bounced around the globe traveling through more than 38 countries in the last 16 years.  I found an appreciation for different cultures and foods.  In between, I volunteered with a wildlife care center in south Florida before temporarily moving to Maine to teach conservation ecology.  I returned and briefly worked for a major research and medical university in South Florida reading and approving all the medical research that was taking place on campus ensuring compliance and a high standard of ethics.  When my father was diagnosed with cancer I saw a need for patient advocates and so I became one self-employed.  After the university closed my department I took a while to look around and regroup.  I always had a passion for cooking and the science behind it a la Alton Brown chemistry.  This past January I was organizing a trip to the South Florida Fair and I stumbled upon their culinary competition.  On a spontaneous lark, I entered that very instant being the day before the competition.  I made my famous Monkey Butter and ended up taking 1st place and winning the blue ribbon and large trophy.  After a couple of weeks of rumination and serendipity, JP's Delights was born.
